Day 8 on the Fast Metabolism Diet 5 6 13

Today is the beginning of week 2 - OMG we made it a week!  In my last post about the Week 1 recap - I lost 8.4 lbs and the hubby lost 10.8 lbs in one week!  AMAZING RESULTS!  Im so proud of us!  We stuck together and didnt let the temptations get to us.  We had our moments but we leaned on each other to get us through and now we feel good.  I feel great - Im back into my size 8 pants, my ring is starting to fall off again and overall I feel a sense of achievement.  My energy is about the same, perhaps a little better but its Monday and Im probably still recovering from an exhausting weekend. 

Im looking forward to trying a couple of new recipes this week, of which one of them I did tonight and it was delicious!  I feel more relaxed going into this week since I know what to do from a planning perspective.  Im also interested in what the scale will bring but I know that I cant possibly lose another 8 lbs in a week, so Im hoping for at least 3 to 4lbs.  We shall see!

Notes on Food:
Broccoli and Chicken rice bowl is a favorite of ours from last week.  Its actually pretty simple, it just takes about 30 min to cook - just enough time to do some dishes and laundry!  There is some prep work in chopping veggies but its worth it.
Chicken Sausage Fusilli - this was awesome!  Ive never had chicken sausage and was skeptical of the recipe when I first read it, but we tried it and it turned out great.  Im so glad we have enough for leftovers for tomorrow.  Big plus - we got to have PASTA (we were both very surprised).  It was a brown rice pasta that I found at Kowalskis (No Wheat on this diet!).  The pasta was actually pretty light in texture and taste really good.  YUMMM!  This is definitely a recipe I will make forever!  It can easily be doubled to make for a gathering or to have more leftovers.  New favorite recipe!

Preparation:
I made lunch ahead for today and tomorrow - which is new for me.  Ive never made a meal for future days, that I hadnt ate for dinner that night.  So cooking at 9pm last night for todays lunch was so different, yet felt good to get it done on a Sunday night.  I may think about prepping more meals for the week on Sundays, but I get nervous that it wont taste right or that itll dry out from the fridge.  Anyway, something to consider for next week.

Week 8 Weigh In Results

Its now week 9 and Saturday morning I had my weigh-in for week 8.  I lost another 2.5 lbs!  Thats a total loss of 33.5 lbs and on top of that, Ive lost a total of 5 inches from my waist!  Not bad for two months work, if I do say so myself. 

For Easter today Ive made a Medi-Friendly dessert to bring to my grandmothers house.  Its actually an old recipe of hers that Ive adapted to fit into my Medi-Weightloss plan.  Check out the recipe below & Enjoy!

Cool Whip Salad
8oz Cool Whip Sugar Free (or Cool Whip Fat Free)
16 oz fat free cottage cheese
1 small box (0.30 oz) sugar-free orange Jell-o, as packaged
1 can (15 oz) Del Monte No Sugar Added Mandarin Oranges made with Splenda, drained

Thaw  frozen Cool Whip in the refrigerator until creamy.  Mix all ingredients together in a large bowl & refrigerate at least 2 hours.  Makes about 8 servings, 1/2 cup each.  [Nutrition Info per serving: 128 kcal, 3g fat (3g sat fat), 2.5 mg cholesterol, 233 mg sodium, 45 mg potassium, 18g carbs (0.5g fiber, 6g sugar), 7.5g protein]  Note that the mandarin oranges account for the majority of carbohydrates and also include sugar alcohol which is shown to not negatively impact glucose levels but can cause some abdominal discomfort if eaten in quantity.

Day 10 on the Fast Metabolism Diet 5 8 13

I continue to feel more awake in the morning which is great!  Today was back to phase 2 and my least favorite morning food - egg whites with spinach.  Perhaps Ill do turkey bacon tomorrow instead, but that means I need to find a veggie to eat with it and I think veggies go better with eggs, so well see what I decide tomorrow.  I do know that I will be avoiding the hard boiled egg whites - Im eating beef jerky for every snack instead!

Morning Weigh In:
Kiana: 154.8 lbs
Anthony: 149.6 lbs before shower, 148.8 lbs after shower -- So, my husband first weighed the same as yesterday, then took a shower and weighed himself again losing 0.8 lbs.  Im not really sure what to think about why this is.  But going forward, hes doing only one weigh-in - none of this double check stuff!

Notes on Food/Preparation:
I made a big pot of soup again for this week, which I plan to freeze some of it up for next week instead of having to make it again.  And, oh filet mignon, how I love thee!  Super yummy with asparagus on the grill.
I probably should find another source of protein for snacks - but beef jerky is pretty tasty.

Cheese has fat--natural saturated fat that decrease cholesterol and increase cardiovascular health. Consumed in moderation, all-natural, hand-crafted cheeses are one of the most delicious ways to obtain saturated fat, minerals, vitamins and calcium. It makes up a huge part of the clean eating diet, enabling easy healthy cheesy recipes, and is certainly NOT what makes you fat!

1) Avocado, Egg and Blue Cheese Bake

Halve the avocado and take out the pit. Then crack an egg in each avocado half, and mix in blue cheese crumbs. Bake in oven at 350 F for 10 - 12 minutes.

2) Cherry-Topped Goat Cheese Melt (Recipe Here)

3) Swiss Chicken Melt with Avocado

This was an easy and healthy way to enjoy chicken, cheese and avocado. If you like the combo, youll like the recipe, which you can find here.


4) Prosciutto-Wrapped Mozzarella

What an easy and tasty idea! Just wrap mozzarella cheese with prosciutto and splash a pinch of dry herbs. Then, enjoy. 


5) Mini Babybel Snacks

Mild, creamy and delicious, Babybels the best! Kids love them--and so do adults.


6) Baked Apple with Dates, Blue Cheese and Pistachios

Some people dislike blue cheeses sharp flavor. I, however, love it. I also love combining it with different flavors such as sweet apple slices and smoky pistachios. This easy healthy and cheesy snack was an explosion of flavors in my mouth. I hope you like it too.

Todays breakfast was simple: just a whole wheat toast with organic cream cheese spread, with hard boiled eggs and grapes on the side. It was also delicious and wholesome, and a great breakfast idea for clean eating diet.


8) Medjool Dates with Soft Goat Cheese 

Another healthy idea with goat cheese, and it just as delicious. The combination of sweet medjool and creamy goat cheese blended well together. Plus, it was easy to do. You should certainly try it.

Substituting all-natural ground chicken for beef cuts calories and fat without sacrificing flavor. We found todays lunch, a simple ground chicken meat sauce over whole wheat rotini, a healthy and delightful choice. To enhance the nutritional value of todays clean eating lunch, we added a side of mixed greens with farmers market cucumber.
