Day 53

Day 53 and I would like to update everyone on my adventure with Tom Yum soup.  First of all, let me just say that if any recipe ever tells you to use fish sauce, DONT.  I started making the soup and it smelled delicious and the moment I added that fish sauce it started to stink... I mean really stink.  My house stank for 3-4 hours afterward.  My hair, skin, clothes, all stank from standing near it.  I ended up not finishing the soup but turning off the heat, putting on the lid and the pot went outside for the night until we could dump it in the woods the next day - thats how bad it smelled.  I think next time Ill skip the fish sauce and try making it without but it just wasnt meant to be this time around. 

Also at my weigh-in on Saturday I found out that one of my coworkers also started Medi-Weightloss at the same clinic!  So weve been exchanging stories and frustrations today.  She and her husband started it a little over a week ago and so far theyre doing well having lost 7.3 and 8.8 lbs, respectively. 

Im thinking I might try to get back into working out this week.  Its been long enough where Ive been lazy that I feel like I should do something to get me going again.  Im torn between Wii Fit and dusting off my treadmill.  I think I might hit the treadmill and use my "high energy" play list on my iPod. 

Heres hoping that this week is just as successful as last week!

Sour Blueberry Ice Cream



From looking at the final product you would think this was just any other bowl of delicious and totally innocent ice cream. Dont believe what you see. It is delicious and refreshing. However it wasnt so benign when it had splattered everywhere in the kitchen. Top and bottom cupboards, puddles on the counter, dripping down the front of my pants, staining the kitchen rug, the dog trying to lick at the heap of blueberry syrup on the floor. There was a lot of very creative swearing.

See I pictured this whole thing happening in my head as I was dumping the blueberry mixture into the blender and cringing, waiting for the worst possible thing to happen. Then it did. While I was tightening the blender pieces and making sure everything was put together properly to avoid disaster, it never occurred to me that the rubber disk that creates a seal in the bottom of the bowl could slip to the side and create a gap for evil purple liquid to escape from.

As soon as I poured the blueberries in the blender the chaos started. In the crevice where the glass bit of the blender meets the plastic base the liquid started spurting out. Not just drizzling or trickling. It was shooting out on the underside of the cupboard and on my arms. About a third of my precious blueberry mixture ended up on the counter. I tried to tighten the pieces hoping for the best. Crossing my fingers the whole time I blended and made a beautiful purple liquid with no other major issues.

I wrapped the blender in dish towels and added the heavy and sour cream prayed for no more spurting. And all was well until I went to pour the mixture into a bowl at which point the precarious rule of physics that was keeping the liquid from seeping everywhere left me. Half of the ice cream mixture ended up in the bowl, the other half on the floor. That any of it made it in the bowl was more than I had expected. Things were already a mess so I continued with this highly mistaken course of action, emptying the blender, putting what made it into the bowl into the refrigerator, out of my sight to cool off and began the laborious task of de-purpling the kitchen.

It didnt put up nearly as big a fight going into the ice cream maker but the whole time it was churning I was thinking “boy this better be good.” This was going to have to be awfully good ice cream to make up for the disaster.

In the end all I can say for it however is that its interesting. Blueberries work really well with the tartness of the sour cream and it creates a nice rich velvety texture. Amidst all the drama I did manage to put in too much lemon juice (which I had to substitute since I had no lime) and most of my precious berries were in a puddle on the counter so it wasnt as delicious and sweet as it probably should have been. Its quite sour which isnt a bad thing it just isnt very dessert like.

Id only recommend making this if you have much better luck than I do with blenderfuls of malevolent purple liquid. Ive learned my lesson and will be keeping my blueberry obsession to very simple recipes from now on. Which mostly means if you need me Ill be standing in front of the refrigerator gorging myself on berries straight from the container. Its safer that way.


Sour Blueberry Ice Cream

1 cup blueberries (fresh or frozen, if frozen, thaw and drain)
1/3 cup agave nectar
Pinch of salt
Grated zest of one lime
Juice of 1/2 a lime, or more juice to taste
3/4 cup heavy cream
3/4 cup sour cream

In a medium saucepan cook blueberries, sugar, salt, lime zest and juice over medium heat, stirring, until mixture boils and the berries pop and soften, about 4 minutes.

Pour the berry mixture into a blender and whirl until pureed, the mixture will not be completely smooth. Add the heavy cream and sour cream and pulse to blend. Taste and add a bit more lime juice or agave nectar if you choose.

Pour the blend into a bowl and refrigerate until it is chilled before churning into ice cream.

How To Lose Weight Fast Without Diet Pills Or Exercise!

I have always been what most would consider a “big girl”. In January 2014, I weighed 180 lbs (around 82 kilograms), which is quite overweight for a woman my height. I wasn’t always this weight though. In my teenage years, I weighed only 140 pounds and I felt much healthier and happier. 

I strived desperately over the years to get back to this weight. But with a stressful and busy work life, I struggled to do so. Nothing seemed to work for me. I tried everything from diet pills to exercise machines I saw advertised on TV. I even tried crazy diets like the acai berry diet, and the green tea diet. They didn’t do anything for me. I was still overweight and considered myself ‘fat’.

That all changed in March 2014 though. I lost a staggering 23 pounds in only 21 days using an extreme diet I found online called The 3 Week Diet. I came across this diet after I read a news article about a famous Victoria Secret model who was using this exact same diet to lose loads of fat in preparation for photo shoots. If it worked for her I thought, shouldn’t it work for me?

I immediately started searching on Google and managed to find the official 3 Week Diet website. There, I watched a video by a professional nutritionist who revealed step-by-step what was needed to lose weight quickly. I was shocked, because noone had ever told me this information before! I had visited personal trainers, dieticians, and doctors, and in all these years, noone had ever told me these dieting secrets!

The next day I began the program. At first I thought it would be really difficult and that I would have to starve myself to see any progress. Boy was I wrong! I pretty much ate whatever I was eating before, but I made sure to eat it at the specific times when my metabolism was burning a thousand times faster than usual. I also made sure to include the secret fat burning foods listed in The 3 Week Diet with every meal. These things combined made the fat literally melt right off my body! How did I know what times my metabolism was burning fat and what foods to include in my diet? Well, Brian from The 3 Week Diet had laid it all out for me as soon as I joined the website. It couldn’t have been easier!

On the first day alone, I lost 2 lbs (around 1 kilogram). The next day, I lost a massive 3 lbs! By the end of the first week I had lost around 10 lbs (4.5 kilograms)! That was much more than I had anticipated. I thought I would lose around 5 lbs max! But 10 lbs in only 7 days! That was life changing! I continued to follow the diet for the entire course of 21 days, and by the end of the diet I had lost an earth-shattering 30 lbs of 100% pure body fat!

My dreams had come true! I was now closer to my ideal body weight than ever before! I felt slimmer, sexier, and healthier! My belly fat had shrunk, my butt was firmer, my thighs were tighter, and my cheeks were no longer round and chubby! Some people barely recognized me! I loved my new body and it was all 100% thanks to The 3 Week Diet. It changed my life!

I am continuing to do The 3 Week Diet and the fat is still dropping off! Im aiming to get down to 140 lbs and I am probably going to get there in less than a couple weeks! This diet has been one of the best experiences of my entire life. I didn’t have to starve myself, I didn’t have to take any unhealthy diet pills, I didn’t have to work my butt off at the gym, and I didn’t have to eat bland boring food! The 3 Week Diet is really the only solution out there today if you are looking for a system which shows you how to lose weight fast. It worked for me, and I know it will work for you too.

Greek Salad
